How do you mark the start of your weekend? For us, there's a moment at the end of the Friday workday when things just naturally slow down. The busy week is done, and it's finally time to ease into a more relaxed pace.
That moment often finds us on the couch, feet up, with a simple plate of cheese and these homemade crackers. Maybe we're watching the sunset or just settling in with a good book. Having a few food sensitivities can make finding easy snacks a challenge, but I've grown to love experimenting with new recipes.
This cracker creation has become a regular ritual here. I made a rosemary and sea salt version, and another with smoked paprika and sea salt -both incredibly tasty and surprisingly simple to make. Since they're also egg-free, dairy-free, and sugar-free, they're a worry-free snack I can truly enjoy. There's a little salt in the dough, but you can always skip the extra sprinkle on top if you prefer.
So as Friday evening arrives, it's the simple pleasure of these crackers and a bit of quiet that officially marks the weekend for us. I hope you enjoy the recipe. Don't forget to share your own cracker creations with us!;

Savoury Crackers (Egg-Free, Dairy-Free, Sugar-Free)
Yields: Approximately 35-40 crackers
Prep time: 15 minutes
Cook time: 12-15 minutes
Base Ingredients
1 cup plain flour (130g)
¼ tsp salt (1.5g)
⅓ cup water (80g)
2 tbsp olive oil (30g)
Flavour Options (Choose One)
Option A: 1 tbsp fresh rosemary, finely chopped (4g) AND 1 tsp dried onion flakes or garlic powder (3g)
Option B: 1 tbsp smoked paprika (4g)
Instructions
Preheat your oven to 190°C on the bake setting. Line a baking tray with baking paper and set it aside.
If you're using dried onion flakes, grind them into a powder using a mortar and pestle.
In a bowl, combine the flour, salt, and your chosen flavourings (rosemary and onion powder, or smoked paprika).
Add the olive oil and water. Mix until a dough starts to come together.
Use your hands to gently bring the dough into a ball. Avoid over-kneading; you only need to knead it just enough to combine the ingredients.
On a lightly floured surface, roll the dough out thinly, about 3-4mm thick. The thinner you roll the dough, the crisper the crackers will be. You will also need to lightly flour the dough surface.
Using a pizza cutter, knife, or cookie cutter, cut the dough into your desired shapes (squares, circles, rectangles, or free-form).
Carefully transfer the crackers to the prepared baking tray.
Use a fork to pierce each cracker a few times; this prevents them from puffing up while baking.
(Optional) Sprinkle a little sea salt over the top of the crackers.
Bake for 12–15 minutes, or until they're lightly golden brown. Keep a close eye on them, as baking time can vary depending on your oven and the thickness of the crackers.
Let the crackers cool on the baking tray for a few minutes before moving them to a wire rack to cool completely.
Once cool, store them in an airtight container. They should stay nice and crispy for a few days.
Tips
Using plain flour with a lower gluten content will help ensure a crispier cracker.
Don't over-knead the dough. Too much gluten development will result in a chewy, rather than crispy, cracker.
The crackers may feel a little soft when they first come out of the oven but will crisp up as they cool.
Bake the crackers until the edges are golden brown and the surface looks dry.
If your oven has hot spots, you may need to rotate the tray halfway through the bake for even cooking.
Enjoy these simple savoury crackers as a delicious and dairy-free way to unwind! 😌
